Tagliatelle with Salmon & Spinach

Ingredients

Dried tagliatelle400 g
Smoked salmon slices8 slices
Fresh spinach8 handfuls
Crème fraîche4 tbsp
Lemon wedges4 wedges

Preparation

1.

Cut the smoked salmon slices into pieces.

2.

Bring a pot of salted water to a boil and cook the pasta according to the package instructions. Before draining, reserve a small ladle of the cooking water, then drain the pasta.

In a hot pan, add the crème fraîche, the reserved cooking water, lemon juice and spinach. Mix and cook for 1 to 2 minutes over medium heat. Season with salt and pepper.

4.

Add the drained pasta to the pan with the smoked salmon pieces. Zest the lemon over the top, then mix.

5.

Serve the salmon and spinach pasta on a plate and adjust the seasoning to taste. Enjoy!

Tips

For an extra indulgent touch, swap the crème fraîche for garlic-and-herb cheese, or stir some dill or dried basil into the sauce.
